For the Chipotle Shrimp:
  • 1 1/2 lbs large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp chipotle chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1/2 lime
For the Salad Base:
  • 6 cups chopped romaine lettuce
  • 1 large avocado sliced
  • 2 medium tomatoes cut into wedges
  • 1/2 small red onion thinly sliced
For the Chipotle Yogurt Dressing:
  • 1/2 cup Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1 tsp adobo sauce
  • Salt and black pepper to taste

Method
 

  1. Make the Dressing: In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, honey, and adobo sauce. Season with salt and pepper. Chill until ready to use.
  2. Cook the Shrimp: In a bowl, toss shrimp with olive oil, garlic, smoked paprika, chipotle chili powder, cumin, salt, pepper, and lime juice. Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and lightly charred.
  3. Assemble the Salad: In large bowls, layer romaine lettuce, tomato wedges, red onion, and avocado slices.
  4. Add the Shrimp: Place cooked chipotle shrimp on top of each salad.
  5. Drizzle and Serve: Drizzle with chipotle yogurt dressing and finish with extra lime juice or fresh cilantro if desired.
