Ingredients
 
 

For the Chicken:
  • 4 boneless skinless chicken breasts pounded to even thickness
  • 1/2 cup oat flour
  • 2 eggs beaten
  • 1/2 cup crushed cornflakes or panko
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1 tbsp olive oil
For the Pasta & Sauce:
  • 12 oz spaghetti or linguine
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 jar light Alfredo or garlic-Parmesan pasta sauce
  • 2 tbsp cream cheese softened
  • 1/2 cup grated Parmesan cheese
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 cup pasta cooking water as needed
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Method
 

  1. Prepare the Chicken Coating: In one dish, mix oat flour with salt, pepper, garlic powder, and oregano. In another, beat the eggs. In a third, add crushed cornflakes or panko.
  2. Coat the Chicken: Dip each chicken breast in the flour mixture, then egg, then press into cornflakes or panko until fully coated.
  3. Cook the Chicken: Heat olive oil in a skillet over medium heat. Cook chicken for 4–5 minutes per side until golden brown and fully cooked. Remove and set aside.
  4. Cook the Pasta: Bring a pot of salted water to a boil and cook pasta until al dente. Reserve some pasta water, then drain.
  5. Make the Sauce: In the same skillet, heat olive oil and sauté garlic for about 1 minute. Add pasta sauce and bring to a gentle simmer. Stir in cream cheese until smooth, then add Parmesan, lemon juice, and zest. Add pasta water as needed to loosen the sauce. Season to taste.
  6. Combine Pasta & Sauce: Toss cooked pasta with the sauce until evenly coated.
  7. Assemble & Serve: Slice the chicken and place over the pasta. Garnish with parsley and extra Parmesan if desired.
