For the Lemon Pepper Chicken:
  • 6 oz boneless skinless chicken thighs or breasts
  • 1 tsp olive oil
  • 1 tsp lemon pepper seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano or parsley
  • Salt to taste
For the Rice:
  • 1/2 cup cooked white rice
  • Pinch dried parsley or mixed herbs
For the Honey Garlic Carrots:
  • 1 cup baby carrots or sliced carrots
  • 1 tsp olive oil
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
For the Cucumber Parsley Salad:
  • 1/2 cup finely diced cucumber
  • 1 tbsp finely chopped fresh parsley
  • 1 tbsp finely diced red onion
  • 1 tsp lemon juice
  • Salt to taste
For Serving:
  • 1/4 cup hummus
  • 1 tsp olive oil for drizzling

Method
 

  1. Cook the Chicken: Season chicken with lemon pepper seasoning, garlic powder, herbs, and salt. Heat olive oil in a skillet over medium heat and cook for 4–6 minutes per side until golden and fully cooked. Let rest, then slice.
  2. Prepare the Carrots: Toss carrots with olive oil, honey, garlic powder, salt, and pepper. Roast at 425°F for 18–22 minutes until tender and caramelized, or cook in a skillet until softened.
  3. Make the Cucumber Salad: In a bowl, mix cucumber, parsley, red onion, lemon juice, and salt. Set aside.
  4. Warm the Rice: Heat cooked rice and sprinkle lightly with dried herbs.
  5. Assemble the Bowl: Add rice to a bowl, top with sliced chicken, honey garlic carrots, cucumber salad, and hummus. Drizzle hummus with olive oil.
  6. Serve: Enjoy warm or store for meal prep.
