Ingredients
 
 

For the Chicken:
  • 1 1/2 lb boneless skinless chicken breast
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
For the Roasted Peppers:
  • 2 large red bell peppers diced
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the Cucumber Tomato Salad:
  • 1 1/2 cups cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 2 tbsp fresh parsley chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/4 cup crumbled feta cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the Tzatziki:
  • 1 cup plain nonfat Greek yogurt
  • 1/2 cucumber grated and squeezed dry
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Marinate the Chicken: In a bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 20 minutes.
  2. Cook the Chicken: Grill or pan-sear over medium-high heat for 5–6 minutes per side until fully cooked. Let rest, then slice into strips.
  3. Roast the Peppers: Preheat oven to 400°F. Toss diced peppers with olive oil, salt, and pepper. Roast for 18–20 minutes until tender and slightly charred.
  4. Make the Salad: In a bowl, combine cherry tomatoes, cucumber, red onion, parsley, lemon juice, olive oil, feta, salt, and pepper. Mix well.
  5. Prepare the Tzatziki: In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper until smooth.
  6. Assemble the Bowl: Add cucumber tomato salad and roasted peppers to a bowl. Top with sliced chicken and spoon tzatziki over the top.
  7. Serve: Enjoy immediately while fresh.
