Parmesan Herb Crusted Roasted Potatoes

Ingredients

  • 2 lbs Yukon Gold potatoes, cut into chunky cubes
  • 2 tbsp extra virgin olive oil or melted butter
  • 2/3 cup grated parmesan cheese
  • 2 tbsp mixed dried Italian herbs (or fresh, finely chopped)
  • 2 tsp garlic powder
  • 1/2 tsp paprika
  • 1 tsp salt, 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped

        Directions

        1. Preheat oven to 425°F. Line a sheet pan with parchment.
        2. Toss potatoes in oil, herbs, garlic, paprika, salt, and pepper.
        3. Liberally coat potatoes with parmesan, mixing to thoroughly coat each piece.
        4. Arrange potatoes in a single layer (cut side down for max crisp). Roast 25–30 min, flipping halfway through, until deeply golden and crisp.
        5. Toss with parsley, serve hot, and sprinkle with extra parmesan if desired.
