
Parmesan Herb Crusted Roasted Potatoes

Ingredients
- 2 lbs Yukon Gold potatoes, cut into chunky cubes
- 2 tbsp extra virgin olive oil or melted butter
- 2/3 cup grated parmesan cheese
- 2 tbsp mixed dried Italian herbs (or fresh, finely chopped)
- 2 tsp garlic powder
- 1/2 tsp paprika
- 1 tsp salt, 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped
Directions
- Preheat oven to 425°F. Line a sheet pan with parchment.
- Toss potatoes in oil, herbs, garlic, paprika, salt, and pepper.
- Liberally coat potatoes with parmesan, mixing to thoroughly coat each piece.
- Arrange potatoes in a single layer (cut side down for max crisp). Roast 25–30 min, flipping halfway through, until deeply golden and crisp.
- Toss with parsley, serve hot, and sprinkle with extra parmesan if desired.
