
Steak Tacos

- For the Steak:
- 1 1/2 lbs flank steak or sirloin (680 g)
- 2 tbsp olive oil (30 ml)
- 2 cloves garlic, minced (6 g)
- 1 tsp chili powder (3 g)
- 1 tsp cumin (3 g)
- 1/2 tsp salt (3 g)
- 1/2 tsp black pepper (2 g)
- Juice of 1 lime (30 ml)
- For the Tacos:
- 8 small flour tortillas (240 g)
- 2 cups shredded lettuce (100 g)
- 1/2 cup diced red onion (75 g)
- 1/2 cup diced tomato or red pepper (75 g)
- 1/4 cup chopped fresh cilantro (15 g)
- 1/2 cup shredded Mexican cheese blend (56 g)
- 1/4 cup light sour cream or Greek yogurt (60 g)
Directions
- Marinate Steak: In a bowl, whisk olive oil, garlic, chili powder, cumin, salt, pepper, and lime juice. Coat steak and marinate for at least 30 minutes (up to 2 hours).
- Cook Steak: Heat a grill pan or skillet over medium-high. Cook steak 4–5 minutes per side for medium-rare, or until desired doneness. Let rest 5 minutes, then slice thinly against the grain.
- Warm Tortillas: Heat tortillas in a dry skillet or directly over a flame until lightly charred.
- Assemble Tacos: Spread a small spoon of sour cream or Greek yogurt onto each tortilla. Add lettuce, steak slices, onion, tomato/red pepper, and cheese. Sprinkle with cilantro.
- Serve: Plate tacos with lime wedges for squeezing.
Tips for Meal prep
Cook and slice steak ahead, then store separately from tortillas to keep them fresh.
Reheat steak gently in a skillet before assembling tacos.
