Zesty Street Corn Cilantro Lime Rice Bowl with Grilled Chicken

Ingredients

  • For the Chicken:
  • 1 1/2 lbs boneless skinless chicken breasts (680 g)
  • 2 tbsp olive oil (30 ml)
  • 1 tsp chili powder (3 g)
  • 1 tsp smoked paprika (3 g)
  • 1/2 tsp garlic powder (2 g)
  • 1/2 tsp cumin (2 g)
  • 1/2 tsp salt (3 g)
  • 1/4 tsp black pepper (1 g)
  • Juice of 1 lime (30 ml)
  • For the Cilantro Lime Rice:
  • 2 cups cooked white rice (370 g, about 1 cup dry before cooking)
  • 1 tbsp olive oil (15 ml)
  • Juice of 1 lime (30 ml)
  • 1/4 cup fresh cilantro, chopped (15 g)
  • 1/2 tsp salt (3 g)
  • For the Street Corn:
  • 2 cups corn kernels, roasted or grilled (320 g)
  • 1 tbsp olive oil (15 ml)
  • 1/4 cup cotija or feta cheese, crumbled (30 g)
  • 1/2 tsp chili powder (2 g)
  • 1/2 tsp smoked paprika (2 g)
  • Salt and black pepper to taste
  • For the Creamy Cilantro Sauce:
  • 1/2 cup plain nonfat Greek yogurt (120 g)
  • 2 tbsp olive oil (30 ml)
  • 1/4 cup fresh cilantro, chopped (15 g)
  • 1 clove garlic, minced (3 g)
  • Juice of 1/2 lime (15 ml)
  • Salt and pepper to taste

Directions

  1. Marinate Chicken: Mix olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, pepper, and lime juice. Coat chicken and marinate at least 30 minutes.
  2. Grill Chicken: Heat a grill pan or skillet over medium-high. Cook chicken 5–6 minutes per side until internal temp reaches 165°F (74°C). Let rest, then slice.
  3. Make Rice: Toss cooked rice with olive oil, lime juice, cilantro, and salt. Fluff with a fork.
  4. Prepare Corn: Heat a skillet with olive oil over medium-high. Add corn, cook until slightly charred. Toss with chili powder, paprika, cotija, salt, and pepper.
  5. Blend Sauce: In a blender or food processor, combine Greek yogurt, olive oil, cilantro, garlic, lime juice, salt, and pepper until smooth.
  6. Assemble Bowls: Divide cilantro lime rice into bowls. Top with grilled chicken slices, street corn, and drizzle with creamy cilantro sauce. Garnish with lime wedges and extra cilantro.
