Ingredients
 
 

For the Cauliflower:
  • 1 medium head cauliflower cut into bite-sized florets
  • 3/4 cup all-purpose flour
  • 3/4 cup milk dairy or unsweetened plant-based
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Buffalo Sauce:
  • 1/2 cup buffalo sauce
  • 2 tbsp melted butter or vegan butter
For Serving:
  • Ranch or blue cheese dressing
  • Fresh parsley finely chopped (optional)

Method
 

  1. Preheat the Oven: Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Make the Batter: In a large bowl, whisk together flour, milk, garlic powder, paprika, salt, and black pepper until smooth.
  3. Coat the Cauliflower: Add cauliflower florets to the batter and toss until evenly coated. Shake off excess batter and place in a single layer on the baking sheet.
  4. First Bake: Bake for 20 minutes, flipping halfway through, until lightly golden and set.
  5. Make the Sauce: In a small bowl, mix buffalo sauce with melted butter.
  6. Sauce the Cauliflower: Remove cauliflower from the oven and toss with the buffalo sauce until evenly coated.
  7. Final Bake: Return to the oven and bake for another 10 minutes, or broil for 2–3 minutes for extra crispiness.
  8. Serve: Garnish with fresh parsley if desired and serve warm with ranch or blue cheese dressing.
