
Avocado & Egg Protein Toast

- For the Toast:
- 2 slices multigrain or whole grain bread
- 1 medium avocado, mashed
- 2 boiled eggs (soft or medium, diced)
- 1/2 cup diced ripe tomatoes
- 2 tbsp grated parmesan cheese
- 1/2 tsp dried oregano (or Italian seasoning)
- 1/4 tsp salt
- 1/4 tsp black pepper
- Optional Toppings:
- Red pepper flakes for heat
- Fresh parsley or cilantro
Directions
- Prepare the Avocado Spread: Mash avocado in a small bowl with a pinch of salt and black pepper until smooth but slightly chunky.
- Toast the Bread: Lightly toast bread slices until golden and crisp.
- Assemble the Toast: Spread mashed avocado evenly over each slice.
- Add Toppings: Layer diced boiled eggs and diced tomatoes on top.
- Finish: Sprinkle with grated parmesan and dried oregano. Add extra seasoning or red pepper flakes if desired.
- Serve: Enjoy immediately as a high-protein, nutrient-packed breakfast.
Tips for Meal prep
Boil eggs ahead of time and store in the fridge for up to 4 days for quick assembly. Keep avocado unmashed until ready to eat to prevent browning. For extra protein, add smoked salmon or turkey slices on top.
