Ingredients

      • For the Toast:
      • 2 slices multigrain or whole grain bread
      • 1 medium avocado, mashed
      • 2 boiled eggs (soft or medium, diced)
      • 1/2 cup diced ripe tomatoes
      • 2 tbsp grated parmesan cheese
      • 1/2 tsp dried oregano (or Italian seasoning)
      • 1/4 tsp salt
      • 1/4 tsp black pepper
      • Optional Toppings:
      • Red pepper flakes for heat
      • Fresh parsley or cilantro

      Directions

      1. Prepare the Avocado Spread: Mash avocado in a small bowl with a pinch of salt and black pepper until smooth but slightly chunky.
      2. Toast the Bread: Lightly toast bread slices until golden and crisp.
      3. Assemble the Toast: Spread mashed avocado evenly over each slice.
      4. Add Toppings: Layer diced boiled eggs and diced tomatoes on top.
      5. Finish: Sprinkle with grated parmesan and dried oregano. Add extra seasoning or red pepper flakes if desired.
      6. Serve: Enjoy immediately as a high-protein, nutrient-packed breakfast.
