
Caramelized Onion & Apple Stuffing

Ingredients
- 8 cups day-old rustic bread, cubed
- 6 tbsp canola oil, divided (or butter)
- 3 large onions, halved and sliced (6 cups)
- 1 tsp dried thyme
- 1 tsp brown sugar
- Salt and pepper
- 2 tbsp water, 2 tbsp apple cider vinegar
- 2 cups celery, diced
- 1 cup onion, diced
- 2 red apples, diced
- 2 tsp dried sage
- 1½ cups chicken or vegetable broth
- Fresh parsley, for garnish
Directions
- In a skillet, heat 3 tbsp oil over medium. Add 3 cups onions, thyme, sugar, salt, and pepper. Caramelize 40 min, adding oil and water as needed. Finish with vinegar and scrape up browned bits.
- Preheat oven to 400°F, grease 9×13 baking dish.
- In pot, heat remaining oil. Add celery, onion, apples, sage, and salt. Sauté 5 min.
- In a big bowl, toss bread cubes with sautéed mixture, caramelized onions, broth. Season, mix well.
- Spread in dish, cover and bake 20 min. Uncover, bake 15 min to crisp the top. Garnish with fresh parsley.
