Cajun Chicken Caesar Salad
This Cajun chicken Caesar salad is a bold, high-protein twist on a classic, combining smoky, spiced chicken with a creamy, tangy Greek yogurt Caesar dressing. It’s fresh, satisfying, and perfect for meal prep or a quick, flavorful lunch.
Ingredients
Method
- Prepare the Chicken: Pat chicken dry and pound to even thickness if needed. Rub with olive oil, Cajun seasoning, salt, garlic powder, paprika, and black pepper. Squeeze lemon juice over both sides and let marinate for at least 10 minutes. Cook by grilling, pan-searing, or air frying at 400°F for 12–14 minutes, flipping halfway, until fully cooked. Let rest, then slice.
- Make the Dressing: In a bowl, whisk together Greek yogurt, mayonnaise, parmesan, olive oil, Dijon mustard, anchovy, lemon juice, garlic, Worcestershire sauce, salt, and pepper until smooth and creamy. Adjust seasoning to taste.
- Assemble the Salad: Toss romaine lettuce with most of the dressing, reserving some for drizzling. Plate and top with sliced Cajun chicken, extra parmesan, and fresh cracked black pepper. Add optional chickpeas or croutons for crunch.
