Ingredients
 
 

For the Cajun Chicken:
  • 2 large chicken breasts
  • 1.5 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Black pepper to taste
  • Juice of 1/2 lemon
For the High-Protein Greek Yogurt Caesar Dressing:
  • 2/3 cup nonfat Greek yogurt
  • 2 tbsp light mayonnaise
  • 1/4 cup finely grated parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 2 tsp Dijon mustard
  • 3 anchovy fillets or anchovy paste optional
  • 2 tbsp lemon juice
  • 2 garlic cloves minced
  • 2 tsp Worcestershire sauce
  • Salt and black pepper to taste
For the Salad:
  • 8 cups chopped romaine lettuce
  • 1/2 cup shaved or finely grated parmesan
  • Fresh cracked black pepper to finish
Optional: roasted chickpeas or high-protein croutons

Method
 

  1. Prepare the Chicken: Pat chicken dry and pound to even thickness if needed. Rub with olive oil, Cajun seasoning, salt, garlic powder, paprika, and black pepper. Squeeze lemon juice over both sides and let marinate for at least 10 minutes. Cook by grilling, pan-searing, or air frying at 400°F for 12–14 minutes, flipping halfway, until fully cooked. Let rest, then slice.
  2. Make the Dressing: In a bowl, whisk together Greek yogurt, mayonnaise, parmesan, olive oil, Dijon mustard, anchovy, lemon juice, garlic, Worcestershire sauce, salt, and pepper until smooth and creamy. Adjust seasoning to taste.
  3. Assemble the Salad: Toss romaine lettuce with most of the dressing, reserving some for drizzling. Plate and top with sliced Cajun chicken, extra parmesan, and fresh cracked black pepper. Add optional chickpeas or croutons for crunch.
