Ingredients
 
 

For the Steak:
  • 4 sirloin or ribeye steaks
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Chimichurri Sauce:
  • 1 cup fresh parsley finely chopped
  • 1/4 cup fresh cilantro finely chopped
  • 3 cloves garlic minced
  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp red chili flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Crispy Roasted Potatoes:
  • 1 1/2 lb baby potatoes or Yukon golds cut into chunks
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme or rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Prepare the Potatoes: Preheat oven to 425°F. Bring a pot of salted water to a boil and add potatoes. Parboil for 8 minutes, then drain well and shake the pot to rough up the edges. Toss with olive oil, garlic powder, thyme, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes, flipping halfway, until crispy and golden.
  2. Make the Chimichurri: In a bowl, mix parsley, cilantro, garlic, olive oil, red wine vinegar, chili flakes, salt, and pepper. Let sit to allow flavors to develop.
  3. Cook the Steak: Pat steaks dry and season with salt and pepper. Heat olive oil in a skillet or grill pan over medium-high heat. Cook steaks for 3–4 minutes per side for medium-rare or to desired doneness. Let rest for 5 minutes, then slice against the grain.
  4. Assemble the Plate: Serve sliced steak with a generous spoonful of chimichurri over the top and crispy roasted potatoes on the side.
