Ingredients
 
 

For the Salmon Marinade:
  • 1 lb salmon cut into cubes
  • 2 tbsp mayonnaise
  • 2 tbsp Japanese barbecue sauce or soy sauce
  • 2 cloves garlic minced
  • 1 tbsp sriracha
  • Salt and pepper to taste
For the Avocado-Cucumber Salsa:
  • 3 small Persian cucumbers diced
  • 1 red onion finely diced
  • 3 avocados diced
  • 3 jalapeños seeds removed and finely diced
  • 3 green onions sliced
  • Juice of 1 lime
  • Salt to taste
For Serving:
  • 4 cups cooked white rice
  • Sesame seeds for garnish
  • Optional extra sriracha mayo or chili crisp

Method
 

  1. Marinate the Salmon: In a bowl, mix mayonnaise, Japanese barbecue sauce, garlic, sriracha, salt, and pepper. Add salmon cubes and toss until evenly coated. Let sit for 10 minutes.
  2. Make the Salsa: In another bowl, combine cucumbers, red onion, avocado, jalapeños, green onions, and lime juice. Season with salt and gently mix. Chill while preparing the salmon.
  3. Cook the Salmon: Preheat air fryer to 380°F (190°C). Arrange salmon cubes in a single layer and cook for 10–11 minutes, flipping halfway, until crispy outside and cooked through.
  4. Assemble the Bowl: Divide rice into bowls. Top with crispy salmon and spoon avocado cucumber salsa alongside or over top.
  5. Finish and Serve: Garnish with sesame seeds and drizzle with extra sriracha mayo or chili crisp if desired. Serve immediately.
