For the Honey Garlic Chicken:
  • 1 lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 3 tbsp honey
  • 3 cloves garlic minced
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice vinegar or lime juice
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
For the Coconut Rice:
  • 1 cup jasmine rice uncooked
  • 3/4 cup light coconut milk
  • 3/4 cup water
  • 1/4 tsp salt
For the Pineapple Corn Salsa:
  • 1 cup fresh pineapple diced
  • 1 cup corn kernels cooked
  • 1/4 cup diced cucumber
  • 1/4 cup diced red bell pepper
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp lime juice
  • Salt to taste
Optional Toppings:
  • Sliced avocado
  • Lime wedges
  • Extra chopped cilantro

Method
 

  1. Cook the Coconut Rice: Rinse rice until water runs clear. Add rice, coconut milk, water, and salt to a saucepan. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Remove from heat, let steam for 5 minutes, then fluff.
  2. Make the Honey Garlic Sauce: In a small bowl, whisk together honey, garlic, soy sauce, rice vinegar, smoked paprika, and black pepper.
  3. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add chicken thighs and cook 4–5 minutes per side until golden and cooked through.
  4. Glaze the Chicken: Reduce heat to medium, pour sauce into the pan, and simmer 2–3 minutes, spooning sauce over the chicken until thickened and glossy.
  5. Make the Salsa: In a bowl, combine pineapple, corn, cucumber, red bell pepper, cilantro, lime juice, and salt. Toss gently.
  6. Assemble the Plate: Add coconut rice to the plate, top with honey garlic chicken, and spoon over pineapple corn salsa. Add avocado and lime wedges if desired.
