Ingredients
  

For the Pancake Bites:
  • 1 medium ripe banana sliced into thick rounds
  • 1/2 cup Kodiak Cakes Power Cakes Buttermilk Mix
  • 1/3 cup nonfat milk
  • 1/2 tsp cinnamon optional
  • 1/2 cup fresh blueberries
  • Nonstick cooking spray or 1 tsp oil for pan
For the Toppings:
  • 1 tbsp natural peanut butter slightly warmed

Method
 

  1. Make the Batter: In a bowl, mix Kodiak Cakes mix, nonfat milk, and cinnamon until a thick, smooth batter forms.
  2. Coat the Banana Slices: Add banana slices to the batter and gently toss until fully coated.
  3. Cook the Pancake Bites: Heat a nonstick pan over medium heat and lightly grease it. Place coated banana slices into the pan and cook for 2–3 minutes per side until golden brown and cooked through.
  4. Assemble the Bowl: Transfer pancake bites to a bowl and scatter blueberries evenly over the top.
  5. Add the Finishing Touches: Drizzle with warm peanut butter and serve immediately.
