Ingredients
 
 

For the Birria Beef:
  • 3 lb beef chuck roast cut into large chunks
  • 1 lb short ribs bone-in
  • 2 tbsp olive oil
  • 1 onion quartered
  • 8 cups beef broth
  • 2 bay leaves
For the Chili Sauce:
  • 5 dried guajillo chiles stems and seeds removed
  • 3 dried ancho chiles stems and seeds removed
  • 2 dried pasilla chiles stems and seeds removed
  • 1 chipotle pepper in adobo optional
  • 4 cloves garlic
  • 1 medium tomato roasted or charred
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp ground cinnamon
  • 2 tbsp apple cider vinegar
  • Salt and pepper to taste
For Assembly:
  • 12 corn tortillas
  • 2 cups shredded Oaxaca or mozzarella cheese
  • Fresh cilantro chopped
  • 1 white onion finely diced
  • Lime wedges for serving

Method
 

  1. Make the Chili Sauce: Toast dried chiles in a skillet for 1–2 minutes until fragrant. Soak in hot water for 15 minutes until softened. Blend chiles with garlic, tomato, cumin, oregano, cinnamon, vinegar, and 1 cup of soaking liquid until smooth.
  2. Cook the Beef: Heat olive oil in a large pot or Dutch oven. Sear beef chunks and short ribs until browned. Add onion, bay leaves, beef broth, and blended chili sauce. Simmer on low for 3–4 hours until beef is tender and shreds easily. Remove meat, shred, and return to the pot.
  3. Prepare the Consomé: Skim excess fat from the top of the broth. Reserve the rich broth for dipping and adjust seasoning with salt and pepper.
  4. Assemble the Tacos: Heat a skillet over medium heat. Dip corn tortillas into the surface of the consomé, then place in skillet. Fill with shredded beef and cheese, fold, and cook until crispy on both sides.
  5. Serve: Plate tacos with fresh cilantro, diced onion, and lime wedges. Serve hot with a bowl of consomé for dipping.
