Ingredients
 
 

For the Chicken:
  • 1 1/2 lbs boneless skinless chicken breast
  • 1/2 cup hot sauce
  • 1 tbsp olive oil
  • 1/2 cup panko breadcrumbs
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the Salad:
  • 6 cups chopped romaine or iceberg lettuce
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup cherry tomatoes halved
For the Dressing:
  • 1/2 cup plain nonfat Greek yogurt
  • 2 tbsp light mayonnaise
  • 2 tbsp low-fat buttermilk optional
  • 1 tbsp fresh lemon juice
  • 1 tsp dried dill
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Method
 

  1. Prep the Chicken: Preheat oven to 400°F and line a baking sheet with parchment paper. Cut chicken into bite-sized chunks.
  2. Coat the Chicken: In a bowl, mix breadcrumbs, garlic powder, paprika, salt, and pepper. In another bowl, toss chicken with olive oil, then coat in breadcrumb mixture.
  3. Bake the Chicken: Arrange chicken on baking sheet and bake for 18–20 minutes until golden and fully cooked. Toss baked chicken in hot sauce until evenly coated.
  4. Make the Dressing: In a bowl, whisk together Greek yogurt, mayonnaise, buttermilk, lemon juice, dill, garlic powder, salt, and pepper until smooth.
  5. Assemble the Salad: In bowls, add lettuce, cabbage, carrots, and tomatoes. Top with buffalo chicken and drizzle with ranch dressing.
  6. Serve: Garnish with extra herbs or black pepper if desired and serve immediately.
