This burger bowl is a high-protein twist on a classic burger, loaded with seasoned beef, crispy roasted potatoes, fresh veggies, and a creamy homemade burger sauce. It delivers all the flavors you love in a lighter, meal-prep-friendly bowl that’s both satisfying and customizable.

- Roast the Potatoes: Preheat oven to 425°F. Toss diced potatoes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until golden and crispy.
- Cook the Beef: Heat a skillet over medium-high heat. Add ground beef and break it apart. Season with salt, pepper, garlic powder, onion powder, and optional paprika or chili flakes. Cook until browned and fully cooked. Drain excess fat if needed.
- Sauté the Onions: In a separate pan, lightly spray with oil and sauté sliced onions over medium heat with a pinch of salt until soft and slightly caramelized.
- Make the Sauce: In a bowl, mix Greek yogurt, mayonnaise, ketchup, mustard, smoked paprika, garlic powder, chili powder, pickle juice, salt, and pepper until smooth and tangy.
- Assemble the Bowls: Add chopped romaine to each bowl. Top with cooked beef, roasted potatoes, tomatoes, pickles, sautéed onions, pepperoncini, and shredded cheese.
- Finish and Serve: Drizzle generously with burger sauce and sprinkle sesame seeds on top. Serve immediately.
