Ingredients
 
 

For the Chicken:
  • 1 1/2 lb boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon sliced into thin rounds
  • 1 tbsp fresh parsley chopped
For the Parmesan Broccoli:
  • 4 cups broccoli florets
  • 1 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
For the Honey-Glazed Carrots:
  • 1 lb baby carrots
  • 1 tbsp olive oil
  • 2 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Prepare the Chicken: In a bowl, mix olive oil, smoked paprika, garlic powder, thyme, cayenne, salt, and black pepper. Rub evenly over chicken thighs. Heat a skillet over medium-high heat and sear chicken for 4 to 5 minutes per side until blackened and cooked through. In the last minute, add lemon slices to the pan to char slightly. Finish with fresh parsley.
  2. Roast the Broccoli: Preheat oven to 400°F (200°C). Toss broccoli with olive oil, Parmesan, breadcrumbs, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 18 to 20 minutes, flipping halfway, until crispy and golden.
  3. Roast the Carrots: On a separate baking sheet, toss carrots with olive oil, honey, salt, and pepper. Roast for 20 to 25 minutes, tossing halfway, until tender and caramelized.
  4. Assemble the Plate: Plate blackened lemon chicken with charred lemon slices, a side of Parmesan broccoli, and honey-glazed carrots. Serve warm.
