
Halloumi and Chorizo Pasta
This halloumi and chorizo pasta is a rich, savory dish packed with bold flavor from smoky chorizo, golden seared halloumi, and a lightly creamy tomato sauce. It’s a satisfying comfort meal with a Mediterranean-inspired twist that feels special but comes together easily.

- Cook the Pasta: Bring a pot of salted water to a boil and cook pasta until al dente. Reserve some pasta water, then drain.
- Cook the Chorizo: Heat a skillet over medium heat, add chorizo, and cook for 3–4 minutes until crispy. Remove and set aside.
- Sear the Halloumi: In the same pan, add halloumi cubes and cook 2–3 minutes per side until golden. Remove and set aside.
- Build the Sauce: Lower heat to medium, add onion and cook until softened. Add garlic and cook briefly, then stir in crushed tomatoes, cream, smoked paprika, and black pepper. Simmer for a few minutes.
- Combine Everything: Add cooked pasta, halloumi, and chorizo to the sauce. Toss well, adding a splash of pasta water if needed.
- Finish and Serve: Transfer to a bowl, top with Parmesan and herbs, and serve hot.
