Ingredients
 
 

For the Lime Honey Chicken:
  • 1.5 lb boneless skinless chicken thighs
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
For the Rice:
  • 1 cup jasmine rice uncooked
  • 2 cups water
  • 1/4 tsp salt
For the Bowl Toppings:
  • 2 ripe avocados sliced
  • 1 cup sliced cucumber
  • 1/2 cup pickled red onions
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Method
 

  1. Marinate the Chicken: In a bowl, whisk honey, lime juice, olive oil, garlic, smoked paprika, cumin, salt, and pepper. Add chicken and marinate for at least 20 minutes.
  2. Cook the Rice: Rinse rice under cold water, then add to a pot with water and salt. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Fluff and set aside.
  3. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–6 minutes per side until caramelized and cooked through. Let rest briefly, then slice.
  4. Assemble the Bowls: Divide rice into bowls, top with sliced chicken, avocado, cucumber, pickled onions, and cilantro.
  5. Finish and Serve: Squeeze fresh lime juice over each bowl before serving.
