
Peri Peri Chicken Drumsticks
This peri peri chicken drumstick plate is bold, spicy, and packed with protein. Juicy roasted chicken paired with fluffy rice, roasted sweet potatoes, and fresh broccoli makes it a balanced, flavorful meal perfect for meal prep or satisfying dinners.

- Marinate the Chicken: In a large bowl, mix olive oil, peri peri sauce, garlic, lemon juice, smoked paprika, cayenne, salt, and pepper. Add drumsticks and coat well. Marinate for at least 30 minutes (or overnight for more flavor).
- Cook the Chicken: Preheat oven to 400°F. Place drumsticks on a lined baking sheet and scatter sliced peppers and onions around them. Bake for 35–40 minutes, flipping halfway, until fully cooked and slightly charred.
- Cook the Rice: Rinse rice until water runs clear. Combine with water and salt in a pot, bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Let sit 5 minutes, then fluff.
- Bake the Sweet Potatoes: Pierce sweet potatoes with a fork, rub with olive oil and salt, and bake at 400°F for 45–60 minutes until tender. Slice open and optionally sprinkle with cinnamon.
- Steam the Broccoli: Steam broccoli for 5–7 minutes until bright green and tender-crisp. Drizzle with olive oil and season with salt and pepper.
- Assemble the Plate: Serve peri peri drumsticks over rice with sautéed peppers, alongside broccoli and a baked sweet potato. Spoon extra sauce or pan juices over the chicken.
