Crispy Chickpea Caesar Salad with Parmesan & Herbs

This crispy chickpea Caesar salad is a fresh, high-protein twist on the classic. Crunchy roasted chickpeas replace croutons, while a rich, creamy Caesar dressing and plenty of parmesan bring bold, satisfying flavor in every bite.

Ingredients
 
 

For the Crispy Chickpeas:
  • 2 cans chickpeas drained, rinsed, and dried
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Caesar Salad:
  • 3 large heads romaine lettuce chopped
  • 1/2 cup freshly grated parmesan cheese
  • 2 tbsp fresh parsley or cilantro finely chopped
  • Fresh cracked black pepper to taste
For the Caesar Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup grated parmesan cheese
  • 1 tbsp Dijon mustard
  • 2 cloves garlic finely minced
  • 2 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 2 tbsp olive oil
  • Salt to taste

Method
 

  1. Roast the Chickpeas: Preheat oven to 400°F. Toss chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 30–35 minutes, shaking halfway, until golden and crispy.
  2. Make the Dressing: In a bowl, whisk together mayonnaise, parmesan, Dijon mustard, garlic, lemon juice, Worcestershire sauce, olive oil, and salt until smooth and creamy.
  3. Prepare the Salad Base: Add chopped romaine lettuce to a large bowl. Drizzle with dressing and toss until evenly coated.
  4. Assemble the Salad: Top with crispy chickpeas, freshly grated parmesan, chopped herbs, and cracked black pepper.
  5. Serve: Enjoy immediately while chickpeas are still warm and crunchy.
