
Chicken Fajita Bowl with Cilantro Lime Sauce
This chicken fajita bowl is a high-protein, flavor-packed meal loaded with seasoned chicken, sautéed peppers, and zesty cilantro lime rice. Topped with a creamy cilantro lime sauce, it’s a fresh and satisfying dish that’s perfect for meal prep or a quick, balanced dinner.

- Prep Chicken and Veggies: In a small bowl, mix garlic powder, onion powder, chili powder, cumin, smoked paprika, salt, and black pepper. Toss chicken with half the olive oil and half the seasoning. Toss peppers and onions with remaining oil and seasoning.
- Cook Chicken and Veggies: Heat a large skillet or grill pan over medium-high heat. Cook chicken for 5–8 minutes until browned and fully cooked. Remove and set aside. In the same pan, cook peppers and onions until tender with slight char. Combine and keep warm.
- Make Cilantro Lime Rice: Stir lime juice, chopped cilantro, and salt into cooked rice. Keep warm.
- Make the Sauce: In a bowl, whisk together Greek yogurt, cilantro, lime juice, garlic, salt, and black pepper. Add olive oil if desired for a smoother consistency.
- Assemble Bowls: Divide cilantro lime rice into bowls. Top with chicken, peppers, and onions. Add black beans, avocado, and pico de gallo. Drizzle with cilantro lime sauce.
- Serve: Garnish with lime wedges and extra cilantro. Serve immediately.
