For the Chicken Fajita Filling:
  • 6 oz boneless skinless chicken breast sliced thin
  • 1/2 green bell pepper sliced
  • 1/4 large yellow onion sliced
  • 1 tsp olive oil
  • 1 tsp fajita seasoning
  • 1/4 tsp garlic powder
  • Salt to taste
For the Quesadillas:
  • 2 medium flour tortillas
  • 1/2 cup shredded Mexican-blend Monterey Jack, or mozzarella cheese
  • Cooking spray or 1/2 tsp oil for the pan
For Serving:
  • Guacamole
  • Light sour cream or chipotle crema

Method
 

  1. Cook the Fajita Filling: Heat olive oil in a skillet over medium-high heat. Add chicken and season with fajita seasoning, garlic powder, and salt. Cook for 4–5 minutes until cooked through. Add bell pepper and onion and sauté for 2–3 minutes until softened and slightly charred.
  2. Assemble the Quesadillas: Heat a nonstick skillet over medium heat and lightly grease it. Place one tortilla in the pan, sprinkle half the cheese over one side, add the chicken fajita mixture, then top with remaining cheese and fold the tortilla closed.
  3. Cook Until Crispy: Cook for 2–3 minutes per side until golden brown and the cheese is melted. Repeat with the second tortilla.
  4. Slice and Serve: Cut into wedges and serve hot with guacamole and sour cream or chipotle crema on the side.
