Ingredients
 
 

For the Chicken Marinade:
  • 1 lb boneless skinless chicken thighs or breasts cut into chunks
  • 3 tbsp plain Greek yogurt
  • 1.5 tbsp olive oil
  • 6 cloves garlic minced
  • 2 tbsp lemon juice
  • 2 tsp smoked paprika
  • 2 tsp cumin
  • 2 tsp oregano
  • Salt and black pepper to taste
For the Tzatziki Sauce:
  • 1 cup plain Greek yogurt
  • 1/2 cucumber finely grated and excess liquid squeezed out
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill chopped
  • Salt and black pepper to taste
For the Bowls:
  • 200 g halloumi cheese sliced
  • 2 medium cucumbers sliced or chopped
  • 4 pita breads warmed or toasted
  • Optional roasted potatoes or fries

Method
 

  1. Marinate the Chicken: In a bowl, mix Greek yogurt, olive oil, garlic, lemon juice, paprika, cumin, oregano, salt, and pepper. Add chicken and coat evenly. Marinate for at least 30 minutes or up to 8 hours.
  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook chicken for 5–7 minutes per side until golden and fully cooked. Set aside.
  3. Make the Tzatziki: In a bowl, combine Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper. Mix well and chill until ready to serve.
  4. Cook the Halloumi: In a pan over medium heat, sear halloumi slices for 1–2 minutes per side until golden brown.
  5. Assemble the Bowls: Divide chicken, halloumi, cucumber, and optional potatoes among bowls. Add a generous scoop of tzatziki and serve with warm pita on the side.
