
Garlic Herb Chicken with Roasted Carrots & Creamy Mash
This garlic herb chicken is juicy, flavorful, and paired with creamy mashed potatoes and caramelized roasted carrots for the ultimate balanced comfort meal. High in protein and perfect for easy weekly meal prep.

- Prep & Roast Carrots: Preheat oven to 425°F. Toss carrots with olive oil, Italian herbs, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and caramelized.
- Cook Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, paprika, and herbs. Sear for 2–3 minutes per side until golden. Remove and set aside.
- Sauté Aromatics: In the same skillet, cook diced onion until soft. Add garlic and cook for 1 minute until fragrant.
- Make Sauce: Add chicken broth, Dijon mustard, and lemon juice. Stir and scrape up browned bits. Return chicken to pan and simmer for 10–12 minutes until cooked through and sauce reduces. Garnish with fresh parsley.
- Mash Potatoes: Boil potatoes until fork-tender. Drain and mash with Greek yogurt, olive oil or butter, salt, pepper, and herbs until creamy.
- Plate: Serve garlic herb chicken over mashed potatoes, spoon sauce on top, and add roasted carrots on the side.
